Avilés cheese with Medina almonds

Belén, from El Toque de Belén, takes us to Asturias with her traditional almond cheese recipe

A delicacy not to be missed!

Ingredients:

  • 6 egg yolks
  • 250 g water (best filtered)
  • 250 g of Medina raw almonds
  • 230 g sugar

Let's get cooking!

  1. We make a syrup to the thread stage.
  2. Mix everything together while adding the ground almonds.
  3. Add the egg yolks one by one and mix well.
  1. Once the dough has separated from the sides of the pan, remove from the heat.
  2. Grease a 15 cm ring and bake in the oven for approximately 20 minutes. Take it out, and after letting it cool, it is ready to enjoy.
