Homemade granola with Medina hazelnuts and almonds

Miriam, known on Instagram as mifitwork, shows us how to make a delicious and super easy homemade granola.

Perfect with yoghurt, milk or just as a healthy snack!

Ingredients:

  • 2 cups of oats
  • 80 g chopped Medina hazelnuts
  • 80 g chopped Medina almonds
  • 30 g honey or maple syrup
  • 50 ml coconut oil or EVOO
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon cinnamon powder
  • Raisins, banana and desiccated coconut to taste
  • Pinch of salt

Let's get cooking!

  1. Take a large bowl and mix the oat flakes, chopped hazelnuts and chopped almonds.
  2. In a small bowl, mix the honey or maple syrup, EVOO, vanilla extract, and cinnamon powder. Mix well until all liquid ingredients are well combined.
  3. Pour the liquid mixture over the dry ingredients in the large bowl and stir well with a spoon or spatula to make sure all the dry ingredients are evenly coated.
  1. Spread the granola mixture in an even layer on the prepared baking sheet.
  2. Bake the granola in the preheated oven for 25-30 minutes, or until golden brown and crispy. Stir the granola halfway through.
  3. Let the granola cool completely on the tray. If you wish, you can add raisins, coconut or dried banana.
