Breaded chicken in roasted Medina pistachios

The blogger Pilar, Labaronísima, shows us a very original recipe, with pistachios as star ingredients, rich in magnesium, iron and calcium.

Ingredients:

  • 2 filleted chicken breasts or drumsticks
  • 4 tablespoons of raw
  • Medina pistachios
  • Extra Virgin Olive Oil
  • Salt and pepper
  • 1 egg
  • For the garnish:
  • 200 g steamed green beans
  • 4 sprigs of celery
  • 1/2 green pepper

Let's get cooking!

  1. To prepare the chicken, start by chopping the pistachios. Then spread them out in a shallow dish.
  2. Beat the egg and season the chicken with salt and pepper. Next, dip the fillets in the egg and then in the pistachios.
  3. It can either be cooked in a fryer with EVOO or, for a healthier option, in the oven. Spread them out on parchment paper and when they are toasted on one side, turn them over.
  1. For the garnish, chop the vegetables. Pour EVOO into a frying pan and add the celery and pepper. Stir and season with salt and pepper. Leave to poach over a medium heat, covered. When it is ready, add the chopped green beans and cook until they are poached.
  2. Remove the chicken from the oven or frying pan, and the vegetables from the frying pan and plate. Top with a few leaves of rocket for a touch of freshness and a few more pieces of chopped pistachio on top.
